Description

Arugula (Eruca vesicaria) is a fast-growing leafy green prized for its fresh, peppery flavor. Tender leaves are excellent in salads, sandwiches, and as a finishing touch on pizza or pasta. Harvest young for a milder bite or let the leaves mature for a stronger taste.

Growing Arugula in Alabama

Arugula is a cool-season crop, making it a natural fit for Alabama’s fall, winter, and early spring gardens. Sow in fertile, well-drained soil in full sun, with some afternoon shade helpful as temperatures rise. Keep the soil evenly moist to encourage tender leaves. Harvest outer leaves as needed, or cut young plants for baby greens. Heat and longer days encourage bolting, which makes the leaves more bitter; make successive small sowings during cool weather for a longer harvest.

Plant size: Typically 1–2 feet tall when allowed to flower. Best use: Fresh salad greens, raised beds, and kitchen gardens.
