Strawberry crisp is a warm dessert with juicy berries and a crisp oat topping. It is easy to make and works well when fresh strawberries are in season.
This recipe gives you three choices: a classic crisp, a lower-sugar version, and a gluten-free version. Each one bakes in a small dish and serves about six people.

Classic Strawberry Crisp

Filling
- 5 cups fresh strawberries, hulled and halved
- 2 tablespoons cornstarch
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
Crisp Topping
- 3/4 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 1/3 cup packed brown sugar
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small cubes
Directions
- Heat the oven to 350°F. Lightly grease an 8-inch square baking dish.
- Mix the strawberries, cornstarch, sugar, lemon juice, and vanilla. Spread the fruit in the dish.
- Mix the oats, flour, brown sugar, sugar, cinnamon, and salt. Cut in the cold butter until the mix looks crumbly.
- Spread the topping over the berries.
- Bake for 35 to 40 minutes. The fruit should bubble and the top should be golden.
- Let the crisp cool for 10 minutes before serving.
Lower-Sugar Strawberry Crisp
Use the same method as the classic recipe. For the filling, use 1 to 2 tablespoons of honey or maple syrup instead of 1/4 cup sugar.
For the topping, use 3/4 cup oats, 1/2 cup almond flour, 2 tablespoons brown sugar or another baking sweetener, 1/2 teaspoon cinnamon, 1/4 teaspoon salt, and 1/4 cup cold butter or coconut oil.
Gluten-Free Strawberry Crisp
For a gluten-free crisp, use certified gluten-free oats. Use almond flour, oat flour, or a gluten-free flour blend in the topping.
Keep the same strawberry filling. Cornstarch or arrowroot can thicken the fruit. Check labels on all packaged ingredients if you must avoid gluten.
